  “早晚粥,午时汤”,这是夏季人们饮食的一种偏好。炎炎夏季,很多人的胃口会发生一些变化,食欲时常处于低迷状态,加上出汗多,体内流失的水分多,脾胃消化功能较差。所以,如何生津止渴、清凉解暑,又能补养身体?家庭主妇们总会在饮食上动些脑筋,想办法增进家人的食欲。


  夏季保健饮食原则


  市中医院有关专家说,夏季饮食以清淡、苦寒、富有营养、易消化的食物为佳,要重视健脾养胃,促进消化吸收功能。一般来说,家庭饮食可从以下几点下手:


  夏季要适当多吃一些苦味的食物,如苦瓜等。夏季酷暑炎热,吃苦味食物,可以健脾,增进食欲。还可多食味酸的食物,如番茄具有生津止渴,健胃消食等功效。

 

  夏季不能暴饮暴食,尤其晚餐更不应饱食。夏季胃的消化功能明显减弱,吃得过饱,消化不了,容易使脾胃受损,导致胃病。如果吃八成饱,食欲就会继续增强。

 
  夏季暑热,胃肠功能受其影响而减弱,因此在饮食方面,调配好了,有助于胃肠功能的增强。细粮与粗粮要适当搭配,一个星期应当吃三餐粗粮,稀与干要适当安排。夏季以二稀一干为宜,早上吃面食、豆浆,中餐吃干饭,晚上吃粥。荤食与蔬菜配置合理,夏天应以青菜、瓜类、豆类等蔬菜为主,辅以荤食,肉类以瘦猪肉、牛肉、鸭肉及鱼虾类为好。


  炎炎夏季,西瓜、冷饮等夏令食品都是人们的最爱,但食用却要讲究科学。


  夏天喝冷饮能帮助体内散发热量,补充体内水分、盐类和维生素,可起到生津止渴、清热解暑的作用。有关营养专家称,夏季的冷饮可选用酸梅汤、赤豆汤和绿豆汤,还可用菊花、金银花、山楂片加水配制成凉茶饮用。西瓜也是夏季里经常食用的消暑佳品,但冷饮和西瓜均不可多食。民间有“天时虽热,不可贪凉;瓜果虽美,不可多食”的俗语。夏季大量冷饮会造成胃肠道突然收缩,不仅影响食物的消化吸收,造成腹痛腹泻等。所以,切忌因贪凉而暴食冷饮。


  在夏季,应注意的还有饮食卫生。在生吃瓜果时,要进行清洗消毒。更要注意熟食的新鲜,不能吃霉变的食物,以防止病原微生物乘虚而入。 


  夏天适当多吃三种菜


  夏季可食用的蔬菜种类很多,吃哪些菜更适宜呢?


  首先是适当多食用一些凉性蔬菜。夏季对人体最重要的影响是暑湿,适当摄入凉性蔬菜有利于生津止渴、除烦解暑、清热泻火、排毒通便。我们常吃的西红柿、芹菜、藕、绿豆芽、空心菜、大白菜、白萝卜、茄子、菠菜、小白菜、油菜、莴笋、苋菜、紫菜等都属于这一类偏寒凉的蔬菜。但久病体弱、身体虚寒者不宜多吃偏寒性的蔬菜。


  第二类蔬菜是瓜类蔬菜。夏季正是黄瓜、丝瓜、苦瓜、佛手瓜、南瓜、冬瓜等瓜类蔬菜上市的旺季,它们的含水量高,又兼具高钾低钠的特点,适合夏天人们大量出汗后补充水分及流失的无机盐。瓜类蔬菜可凉拌,可清炒,还可做汤,也可与肉、鱼一起做菜,清脆爽口,别有风味。


  第三类蔬菜是“杀菌”蔬菜。主要是指葱蒜类蔬菜,大蒜、洋葱、韭菜、大葱、青蒜、蒜苗等,它们含有丰富的植物广谱杀菌素,对各种球菌、杆菌、真菌病毒有杀灭和抑制作用。


  夏季凉拌菜ABC


  许多市民喜欢在夏季做凉拌菜吃,的确,炎热夏季清爽可口的凉拌菜很能开胃,也不必担心会像吃热菜那样满头大汗,有点“火上浇油”的感觉。听说申华商务酒店的厨师长蔡志钢做凉拌菜很有一手,这里请他介绍几款夏令特色凉拌菜的制作方法。


  a 酸辣白菜丝

  原料:白菜梗250克,莲藕250克,红辣椒1个,大葱、生姜、花椒、干辣椒适量,食用油、香油、酱油、香醋、白糖、味精、精盐等少许。
   

  做法:将白菜梗洗净,切成细条,放入沸水中烫一下,捞出滤水晾凉。将莲藕切成小片,稍煮后捞出,放入盘中,撒上精盐拌匀腌一下,滤去盐水。红辣椒洗净去子,切成细丝,将大葱洗净切丝,鲜姜洗净切丝。锅内放油,烧热后放入花椒,炸出香味后将花椒捞出,再将辣椒丝、葱丝、姜丝和干辣椒一起倒入油锅煸炒几下,加入酱油、醋,炒出香味后倒入白菜和藕片的盘中。加入白糖、香油、精盐、味精,用大碗将盘扣住,焖20分钟后拌匀即可。
   

  特点:色泽美观,酸甜脆嫩。
   

  b 外婆八宝
   

  原料:青椒、红椒各一个,豆芽、金针菇各50克,胡萝卜20克,海草、西芹各25克,黄瓜100克。香油两小匙,辣椒油、香醋、精盐各一小匙,白糖半小匙。
   

  做法:将黄瓜、西芹、红萝卜去皮洗净切丝,豆芽洗净,沥干水,金针菇、海草、青椒、红椒分别洗净切丝。将处理好的材料放沸水中焯熟,一起放入盘中,再加入所有的调料拌匀即可。
   

  特点:清淡爽口,色泽鲜明。
   

  c 什锦拉皮

  原料:猪瘦肉50克,鸡蛋一个,粉皮300克,黄瓜50克,香葱、生姜、大蒜、淀粉各适量。食用油、料酒、精盐、味精各适量。
   

  做法:将猪肉切成丝,加盐、料酒、淀粉、水拌匀,放入热油锅内过油至熟。将粉皮洗净泡软切丝,黄瓜洗净切丝,摆在盘中,大蒜洗净切末,葱洗净切丝,姜洗净切丝。锅内放油烧热,加姜丝、葱丝、味精、肉丝炒匀后倒在粉皮上,撒上蒜末拌匀即可。
   

  特点:软嫩适口,风味独特。
     

  不过提醒一下,许多市民做凉拌菜吃,常常做一次连吃几顿,这个习惯不太好。夏天是细菌大量滋生繁殖的季节,凉菜并未经过高温烧煮等处理,是引起细菌性食物中毒的高危食品,最好不要吃隔顿凉拌菜。另外,加工凉拌菜的蔬果事先一定要洗净消毒。
   

  另外,除了食盐、糖、冷开水等做凉拌菜必不可少的配料外,能除去蔬菜根茎的天然涩味、杀菌等作用的醋,去腥、能加速发酵及杀死发酵后产生不良细菌的酒,有去除材料的生涩味或腥味和杀菌作用的葱姜蒜,令人开胃的红辣椒等等,这些凉拌菜配料在起到以上作用的同时,还能大大增加美味哦。
