   3类肉食颜色越浅越好

     肉食类以颜色的有无及深浅可分为三大类:

  色泽鲜红或暗红:如猪肉、牛肉、羊肉等,称为深色肉或红肉。

  肉色嫩白:如鸡肉、鸭肉、鹅肉、兔肉及鱼
肉等,称为浅色肉或白肉。

  几乎无色:主要是水生贝壳类动物肉,如蛤肉、牡蛎与蟹肉等,称为无色肉。

     3类肉食哪一类更有利于人体保健呢?营养学家更看好后两类。奥妙在于浅色和无色肉中的饱和脂肪及胆固醇含量明显低于红肉。尤其值得称道的是接近无色的肉食,其饱和脂肪含量较其他任何类肉食都要低,仅为奶酪和鸡蛋的一半,从而最大限度地避免人体胆固醇的增高。如果要排出一个座次表来,则无疑是:无色-浅色-红色。

     减肥吃肉尽量水煮清蒸

     减肥的时候也应该吃点蛋白质、脂肪,否则,瘦是瘦下来了,体质却差了。所以,减肥期间的饮食要注意蔬菜、水果、肉类、糖类合理分配。

     减肥时别以为吃肉类就会胖,只要食用方法正确,尽量吃瘦肉少吃肥肉,那么就可以轻松拥有丰富的维他命、矿物质、蛋白质等,这样就不怕营养不均衡了。烹调时直接煎炒或油炸的肉食用后容易摄取过多的热量,而直接用水煮可以比煎炒油炸出来的肉减少将近一半的热量。

     肉类食品中的蛋白质是人体所需要的各种营养素的核心。人体激素含量的正常分泌、肌肉的正常增长、免疫系统的正常维护都离不开它。但是要记住一点,要选择高蛋白、低脂肪的动物性蛋白质,控制脂肪。鱼、鸡胸脯肉、蛋清、酸奶都是非常棒的食物,高蛋白、低脂肪。烹饪的方式尽量以水煮、清蒸为宜,不妨试试酸菜蒸鱼,味道不错,也有营养。

     无肉不欢者,很多人都体形肥胖,其实无肉不欢者也是可以适当吃些肉类的。以下肉类就非常适合食用:

     兔肉蛋白质多胆固醇少

  兔肉

     兔肉与一般畜肉的成分有所不同,其特点是:含蛋白质较多,每100克兔肉中含蛋白质21.5克;含脂肪少,每100克仅含脂肪0.4克;含有丰富的卵磷脂;含胆固醇较少,每100克含胆固醇只有83毫克。由于兔肉含蛋白质较多,营养价值较高,含脂肪较少,是胖人比较理想的肉食。

  牛肉

     牛肉的营养价值仅次于兔肉,也是适合于胖人食用的肉类。每100克牛肉含蛋白质20克以上,牛肉蛋白质所含的必需氨基酸较多,而且含脂肪和胆固醇较低,因此,特别适合胖人和高血压、血管硬化、冠心病和糖尿病病人适量食用。

  鱼肉

     一般畜肉的脂肪多为饱和脂肪酸,而鱼的脂肪却含有多种不饱和脂肪酸,具有很好的降胆固醇作用。所以,胖人吃鱼肉较好,既能避免肥胖,又能防止动脉硬化和冠心病的发生。

     瘦猪肉煮炖后脂肪含量会降

  鸡肉

     每100克鸡肉含蛋白质高达23.3克,脂肪含量只有1.2克,比各种畜肉低得多。所以,适当吃些鸡肉,不但有益于人体健康,也不会引起肥胖。

  瘦猪肉

     瘦猪肉含蛋白质较高,每100克可高达29克,每100克脂肪含量为6克,但经煮炖后,脂肪含量还会降低,因此,也较适合胖人食用。
