　　把切成块的豆腐放进180度高温的食用油煎至表皮稍硬、色泽金黄,然后炒香蒜茸、姜丝、菇丝、肉丝，加进汤水和调料，放进炸过的豆腐略焖成菜，即为芳香味浓的红烧豆腐。豆腐改炸为煎或飞水亦可。
　　
　　●蒸制
　　
　　将切成扁长方块的豆腐、薄火腿片、冬菇片在碟上排上二三行，用中火蒸八分钟，伴以熟青菜，撒上葱花、胡椒粉，烧上热油，淋上生抽等调味料，便是造型美观、味道鲜美的“麒麟豆腐”。

　　豆腐切成方块或菱形块，裹上干淀粉，放进180度的热油中炸至表皮酥脆，就可以制成各式脆皮豆腐菜式。把炸好的豆腐按长方形或方阵形、葵花形、山形等排在碟上，然后浇上芡或带副料的芡，芡要稠些，便可烹制出各种味道的脆皮豆腐。

　　经过初步熟处理(炸、煎或飞水)的豆腐放在砂锅内，加入虾米、冬菇、鲜鱿、带子、虾球、汤水、调料，制成海鲜豆腐煲。
　　
　　●烩制
　　
　　蒸熟的鱼，拆肉去骨，与豆腐烩成“豆腐鱼茸羹”，此羹香滑清鲜，四季皆宜。烩制时要配以菇丝、姜丝、韭黄等副料。
　　
　　●滚制
　　
　　“豆腐鱼头汤”是家喻户晓的传统菜。它以气味清香，滋味鲜甜，汤色奶白为特色。制作时注意：鱼头要煎透，用滚水，火要猛。
　　
　　以上所说只是豆腐菜的基本制法，由此可演变出五花八门的美味菜式。另外，去除豆腐豆腥味有两法：飞水，水温约为90度，水温过高豆腐成蜂巢不滑；也可用油炸。
　　
　　豆腐焯水要诀
　　
　　豆腐是豆浆用石膏煮成；北豆腐用盐卤煮成，经压榨成型。
　　
　　南豆腐和北豆腐都有豆腥味，北豆腐并有轻微的苦涩味。为除去异味，许多豆腐菜制作中的要决就是在烹调前都将豆腐放水里焯一下，这焯水大有讲究，常见许多焯制的豆腐不是散碎就是中心出现空洞，不符合烹调的要求，这是没有掌握豆腐焯水的诀窍。正确的方法是，将豆腐划成大小一致的小块，然后放在水锅中，与冷水同时加热，待水温上升到90℃左右时，应转用微火恒温，慢慢见豆腐上浮，手捏似有一定牢度时捞出，浸冷水中。焯豆腐的水一开、火一旺，就易使豆腐中心出现孔洞。
