　　判别食品优劣，相当重要的是靠人的感官识别。一般来说，凡是色、香、味和组织形态等感觉有异常的食品就有“低劣”的嫌疑了。这里介绍防范“七字法”：防“艳、白、反、长、散、低、小”。

　　1 外表过于“艳”丽

　　对颜色过分艳丽的食品要提防，如目前上市的草莓像蜡果一样又大又红又亮、咸菜梗亮黄诱人、瓶装的蕨菜鲜绿不褪色等，你要留个心眼，它是不是在添加色素上有问题？

　 2 防不正常“白”色

  　凡是食品呈不正常不自然的白色，十有八九会有漂白剂、增白剂、面粉处理剂等化学品的危害。还有一种更大的危害是违法乱用有毒害的漂白化学品，常见的有甲醛次硫酸钠（俗称“吊白块”）和甲醛（俗称福尔马林），目前在农贸市场仍发现有用甲醛漂白和保鲜牛百叶、水发蹄筋等水发产品；被称为“万能漂白剂”的“吊白块”常用于粉丝、腐竹和各种需白的食品漂白；银耳、竹荪、笋干、黄花菜常用硫磺熏白加工。

  　3 防保质期过“长”

  　尽量少吃保质期过长的食品。3℃贮藏的包装熟肉禽类产品，采用巴氏杀菌的，保质期一般为7~30天。但在超市上发现这类产品标定的保质期有超过几个月直至一年的，这就有问题了：据发达国家的食品法规，像这类采用真空包装后巴氏杀菌的食品，规定在3℃下的保质期仅为28天左右。我国超市冷风柜温度大部分达不到3℃，所以实际保质期要低于28天，因此购买此类冷风柜低温贮藏包装食品，除高温杀菌产品以外，最好不要超过28天，买回来还应尽量加热后食用。

　 4 防“反”季节食品

  　“反”就是反自然生长的食物。塑料大棚+化肥+农药+激素催大快长的果蔬、冬季的草莓、黄瓜、西红柿、无根的豆芽菜、反常瘦的猪、快速催大的“快大鸡”、硕大的甲鱼、黄鳝等等。冬季不是正常草虾上市季节，天气冷，草虾也不活动了，难以捕捞。为了春节期间卖个好价钱，有人将一定量的“敌杀死”农药放入虾塘，刺激虾活动以便捕捞，这些虾含毒量很少甚至难以检测出，人吃了也不会马上中毒。因此最好对反常的食品加以警惕。

  　5 防“小”作坊式企业

  　要提防小作坊式加工企业的产品，这类企业的食品平均抽样合格率最低，触目惊心的食品安全事件往往在这些企业出现。
　
  　6 防“低”价格“猫腻”

  　“低”是指在价格上明显低于一般价格水平的食品，价格太低的食品肯定有“猫腻”。当然市场上也有价廉物美的食品，在无法辨明真伪优劣的情况下，宁可买价格相对高些、有质量保证的大型企业产品。

  　7 防“散”装食品

  　散就是散装食品。千万要小心散装白酒，每年各地都有发生因饮用私自勾兑和来源不明的散装白酒引起的甲醇中毒事件。散装果脯蜜饯、散装酱菜、散装熟食一直是食品监管部门头痛的问题，有些集贸市场销售的散装豆制品、散装熟食、酱菜等可能来自地下加工厂。
