中秋美食——田螺

  中秋节很快到,广东人很喜欢在过节的晚上边赏月边吃田螺,据说有“明眼”的作用。故有许多广州人都喜欢在晚饭之后,邀约三五知己,又或是心仪之人,沿着长堤一边 散步、一边欣赏珠江两岸的风景、一边聊天。走累了,就找一田 螺档坐下,炒两三碟田螺,开两三瓶啤酒,吹着江风,低尝浅酌, 把酒谈心,真人生一大乐事也。

  闻说炒田螺最初是从顺德传入广州的,但当时人们并未懂得 使用紫苏叶炒田螺。虽然他们尝试过使用辣椒、蒜头、豆豉为炒 田螺的佐料,但始终却未能除去田螺的泥腥味,实令人有美中不 足之感。后来,泮塘一个叫李细苏农夫无意中发现了用紫苏叶炒 田螺可以除去田螺本身的泥腥味,于是这个方法就很快流传开来 了。不久,人们再加以改进:在田螺下锅前先用油捞一下,然后 再下紫苏叶炒,这样更能带出田螺的鲜味。于是乎,和味炒田螺 逐渐成为了广州人所喜爱的一道特色美食。 下面给大家介绍些特色的田螺,大家可以在节日大饱口福。     

  鲜美的田螺塞肉

  主料:田螺

  辅料:猪里脊肉 调料:盐、料酒、香葱、姜、鸡精

  做法:1、将田螺洗净放入锅内焯一下捞出,放凉用竹签挑出田螺肉去尾部待用,香葱洗净切成段,姜洗净切成片;2、将肉洗净和田螺肉一起剁成末,放入香葱、姜、盐、料酒、鸡精调成馅; 3、将肉馅塞入田螺内,逐个放入器皿中,加入香葱段、姜片、料酒、水放入蒸锅中蒸10-15分钟即可。

  特点:味道鲜美可口。

  爆炒田螺

  原料:净螺肉250克。

  调料:烹调油、辣椒酱、花椒、干辣椒、味精、盐、白糖、香油、料酒、姜、大蒜、蒜苗适量。

  刀工成型:田螺去壳取肉洗净,用盐、料酒腌好待用;姜、大蒜切成指甲片;蒜苗取蒜白段,用斜刀法切成1厘米长的马蹄形;干辣椒切成1厘米长的筒状。

  烹调方法:爆、炒。先将腌制好的螺肉用沸水氽一下滤去水分,锅盛油烧至7成热下螺肉爆断生。锅内盛油少许烧热,下干辣椒、花椒炒脆、随即放辣椒酱、姜、蒜片炒香,再投入螺蛳肉、盐、糖、味精、蒜苗快速翻炒,淋入香油和匀起锅装盘。

  风味特色:香辣味浓,滑嫩爽口。

  技术要领:氽螺肉时间不宜过长,以免质老。

  枸杞田螺汤

  配方:枸杞子20克 田螺肉100克 小白菜200克 姜5克 葱5克 盐5克 素油30克

  制作:1.枸杞子洗净,去杂质;田螺肉清水漂去泥,洗净,切片;小白菜洗净,切5厘米长的段;姜切片,葱切段。2.把炒锅置武火上烧热,加入素油,六成熟时,下入姜、葱,爆香,加入田螺炒匀,注入清水500毫升,用武火烧沸,加入盐、小白菜;用文火煮6分钟即成。

  食法:每日1次,每次吃田螺肉50克,随意吃小白菜喝汤。 功效:补肝肾,清热解毒。用于急性黄疸型肝炎同时患有肾病的患者。

  芦笋香槟田螺

  材料:青芦笋12支、洋葱碎600公克、罐装田螺12粒、红葱碎10公克、培根2片、面糊120公克。

  调味料:(1)白酒60公克、牛高汤150公克、盐及胡椒、鲜奶油各少许(2)芝士10公克。

  烹调步骤:1、青芦笋切段烫熟铺于盘底备用。2、将洋葱碎、红葱碎、培根碎炒香,再加入田螺及调味料(1)同煮拌匀盛起,淋于芦笋上。3、芝士入烤箱烤至金黄色取出淋于芦笋上即可。

  紫苏田螺

  材料 紫苏、田螺、蒜头、姜、辣椒

  调味料:味精、盐

  烹调步骤:1、蒜头、辣椒先爆香,再加盐、味精。2、蒜、葱花放入锅中,再加酱油热炒,放入紫苏。3、田螺放入热水烫熟,放入爆香的锅中热炒即可。

  酸笋煮田螺

  原料:傣族腌制的酸笋和新鲜田螺

  佐料:加姜、蒜、野花椒、辣椒、薄荷、香茅草等

  制作所用酸笋,用新鲜竹笋切丝塞入坛内腌渍一星期,使笋带有纯正酸味方可使用。 煮制酸笋田螺汤的田螺,应预先用清水泡养2-3天,不断换水,让田螺在清水中爬动,洗去身上污泥。再将团螺逐只揭去螺盖,敲掉螺尾,用清水反复淘洗,加香茅草搓揉螺壳,使螺壳清爽无污,方可供煮。煮制的程序是先加油将姜、蒜、野花椒、辣椒炒至香味溢出,再加入田螺、香茅草充分翻炒至香味溢出时,加入酸笋、肉汤煮二三十分钟,至田螺熟时,加入洗净的薄荷、荆芥装碗上桌。食用时,嘴唇对准螺口轻吸,螺肉便自然入口。 酸笋煮田螺,螺形完整,螺肉鲜香略带酸辣,富含钙质和蛋白质,营养丰富而又富有民族特色。
