　　饮食烹饪属于文化范畴，也是人类文明的象征之一。中国历史上有不少文人雅士对富有地方风味特色的美馔佳肴给予评价，题词（匾），或吟咏赋诗以述怀，使这些菜点增光添色，身价倍增。

　　国民党元老，著名书法大师、诗人于右任，祖籍陕西省三原县，每次回乡探亲，都要在县城德亭餐馆品尝地方风味菜点。这餐馆有煨鱿鱼丝、干煸鳝鱼、白封肉、疙瘩面；有外形如缕缕金丝盘烧、层层塔楼相叠，口感油而不赋，清爽利口的金线油塔；有由唐代《烧尾食单》中的“见风消”（油浴饼）演变而来的泡泡油糕，色泽乳白，表面膨松，如轻纱、蝉翼，有密密麻麻的珍珠小泡，其味花芳醇香，入口即消，其形玲珑剔透，酷似巧制绫花。于氏对这些菜点的制作技艺和风味特色倍加赞赏。他乘兴为该店挥写了“明德亭”匾额和“名厨师张荣”的题词，从而使这家创建于一九三一年的餐馆，蜚声遐迩，誉满三秦。

　　一九二一年清明节，他亲临西安东关长乐坊徐仁福开设的徐记稠酒店。这酒店有由三千多年前商周时期的“醪槽”演变而来的黄桂稠酒。

　　当年杜甫《饮中八仙歌》中的“李白斗酒三百篇，长安市上酒家眠，天子呼来不上船，自称臣是酒中仙”的酒和“贵妃醉酒”的酒，就是没有加浆的“撇醅”稠酒。此酒酒精成分含量为15%，汁稠似乳，色白如玉，入口绵甜清香，酒味浓郁醇厚，饮后口齿流芳。风味独特的美酒使这位书法大师为倾倒，饮后啧啧称赞，即兴挥毫书写了，“徐家黄桂稠酒店”。徐家将之制成牌匾，高悬店门之上，声誉大增，在古城传为佳话。

　　一九四二年入蜀途中，于右任以陕南宁强县，品尝了县城里著名的王家核桃烧饼。此饼清朝时曾作为贡品，它是以面粉、核桃为主料，配以油、盐等辅料制成的，酥脆油香，回味悠长，营养丰富。于氏食后赞不绝口。随后，这家店生意日益兴隆。

　　一九四七年夏，陕西师专第一届学生毕业，有关部门组织他们到教育事业比较发达的东南各省观摩学习。到达南京后，当时任国民政府监察院长的于右任闻讯，特意邀请全体师生到他的寓所会见。接着，招呼大家聚餐。在大院之内，花坛四周，摆满了众多的摊担：有凉粉、酿皮、凉面、扯面、醪槽、元宵、甑糕、烧饼、腊汁肉等各种陕西风味小吃，诸色纷呈，香气扑鼻。于氏让大家不拘一格，任意就餐，宛似今日的自助餐。师生们情绪活跃，欢声笑语不断。

　　饶有兴味的是，在江苏省太湖之滨，灵山下的吴县木读镇，有一家著名的“石家饭店”。店里十大名菜中，有一道菜叫“（鱼巴）（鱼市）汤”。此菜原名“斑肝汤”。系采用太湖特产斑鱼的肝，辅以火腿片、香菇、笋片等，用鸡清汤烧制而成。一九二七年，于氏偕夫人游西湖赏桂，归途中在石家饭店尝了“斑肝汤”，食后，他即兴题诗：“老桂花开天下香，香花走遍太湖旁，归舟木渎犹堪记，多谢石家（鱼巴）（鱼市）汤。对（鱼巴）（鱼市）汤有人分析，于氏是陕西人，对“吴侬软语”听不真切，故误写了。以后，又由于他的书法颇负盛名，加之诗也写得有韵味，“（鱼巴）（鱼市）汤”反而取代了“斑肝汤”而流传至今，在烹饪界传为佳话。
