　　在我家乡湖南省新化县游家东岭一带，盛产一种美味——稻花鱼干。

　　每到开春谷种下田的时候，父亲从鱼贩子那里买一两碗鱼苗，倒进秧田里。鱼苗和秧苗一起被父亲精心伺候着。插田的时候，再把已长成指甲大小的鱼儿移养到稻田中去。一条条小鱼在禾苗中游来游去，快活地成长着。微风拂禾，稻花坠了，把这些鱼儿喂养得肥嘟嘟鲜嫩嫩的。嘴馋的时候，用竹罩捕了些来，做成金黄的火焙鱼，不论怎么吃，那股子鲜爽味，醇香四溢，让人难以忘怀。草鱼爱吃新分蘖的禾苗，是不能在稻田中喂养的。因此，稻花鱼一般都是些鲤鱼，体形似纺锤一般，有三四两重，出田时滑溜溜地闪着光，带着水，一条条像刚从水里洗出来的玉器。

　　父亲提了一桶滑溜溜、活泼调皮的稻花鱼回来了，便是母亲忙碌的时候。母亲把鱼一条条剖腹取出内脏，择洗干净，撒点盐末和匀，腌上半小时，放在锅中扣上锅盖用柴火急煮几分钟，再捞出放在竹筛上摊匀，置于柴火灶上，用谷皮烟熏，熏到微黄，稻花鱼干就做成了。做成的稻花鱼干放在坛口灌水的坛子里贮存着，随吃随取，极为方便。

　　后来，我远离家乡，住进了县城。每当乡亲为我捎来一些稻花鱼干时，我便想起已经作古的父亲，想起在故乡守望家园的年迈的母亲，想起了故乡那一丘丘的稻田鱼。我今生注定抵挡不住稻花鱼干的诱惑，有时梦里醒来，口里还留着鱼香哩！
